  • Seasonings for pork sausage?!!!!!!

    This is off topic for sure!
    My husband and I were gifted half a wild sow, (female pig for those that don't know), we butchered and wrapped her up last night.
    So today I'm going to grind up the rest for bulk sausage.
    Anyone have any favorite recipes for seasoning their sausage? GRIN!

    I make a lot of Jerky and sausage. Also do a lot of different meats in a smoker. I used to experiment a lot then had some really good sausage and jerky a friend made. When I asked for his recipe he told me all he uses is Hi Mountain seasonings and we have been using it ever since.

      Salt, pepper, onion powder, garlic powder, cayenne (or red chili flakes), and ground fennel seeds. Mix it up dry, taste, and then adjust to achieve the right balance before adding to the pork.

                    That depends upon what I plan to do with the sausage meat.
                    1. Jerky cure and seasoning if I mixed a little with a lot of bisonburger for dried meat.
                    2. Italian Mixed Herbs, garlic powder, pepper and breadcrumb if I wanted to make sausage rolls from scratch.
                    3. Forgive me but I've made Kefthedes. . . must use Greek mix with lots of mint and cinnamon.
                    4. For polpette, I have a polpette seasoning mix.

                      Thanks for all the responses guys! I'm late getting back to every one because 3 days of wrapping, cutting and grinding, I had a heck of a mess to clean up! At the end of day, I would rather carve and paint than clean!
                      I ended up putting together my own mix of herbs and spices because of the time frame, had to get it done before it goes bad, and expense.
                      I have a pretty well stocked spice cupboard.
                      I used what Claude suggested, except for the fennel, hubby doesn't care for it and we don't have it for that reason.
                      I found 3 different breakfast sausage recipes, plus we like Polish, Bratwurst and Linguica sausages. So I kind of combined all of those.
                      I must say, it is yummy! Some of the best I have ever had, not to brag of course! LOL
                      Hopefully I can remember every thing and the quantities I used.
                      Now I have to wrap the sausage up and freeze it.
                      I gave half to our daughter, because we ended up with 8 to 10 pounds. She loved it too!

                          Don't know about the seasonings but you might want to save some that is unseasoned. Then you can make sausage cake with it! This is my mom's recipe and I've been eating sausage cake all my life. Absolutely delish.

                            Just for an F.Y.I...........

                            My paternal grandfather killed and butchered his own pigs all of his life. Cured hams and shoulders, bacon, "and" made sausage and livermush/scrapple.

                            All the seasonings you really need for sausage, at least southern style, is salt, pepper, red pepper if you like a bit of bite, and sage!! The sage is the ticket. It will be what makes it pop. I've had it both with and without and it's bland without it. There's still an old farmer near us that raises and kills pigs each fall and winter and makes sausage. That's the seasonings he uses and it is "good."
