Of all the choices I'd pick Black Walnut, then poplar, and then cherry. JMO

While you're at it, might as well use one of them to carve a few gnocci pasta boards. Cherry should look good.

I would use cherry, olive, poplar, walnut. I would not use oak, as it is too open-grained. For a spatula, the wood "blade" needs to be quite thin and strong. If it's available to you, ash, birch or hickory would be good also.

Love the cherry, Chuck! I haven't carved it, but I play (at) a cherrywood dulcimer, and I think it's beautiful. How did you finish the flipper?

I used Olive oil, for cooking. And love those dulcimers. They had a play group in Texas when we were hosting and theirs were all hand made. Great sounds.
