That kind of looks like an old bark inclusion from where the tree twisted a bit and grew around itself.
You could try Bondo - y'know, the autobody stuff - but be careful working with it as it is toxic as all heck. It will also become harder than the wood...

Looks pretty good so far, and yes - noses can be tricky!
I'd go a bit deeper all around the outside, then adjust the rest of the carving to fit. One of the biggest errors a new carver makes is in not going deep enough.
I won't say too much...

Blood pressure - sheesh!
A couple of years ago, the doc tells me my blood pressure is sky-high and he was really surprised I hadn't fallen over by then because of it. So he sticks me on these little teensy pills that reduced it to something approaching 'normal' - whatever the heck that is.
